Chef Jeffy's simple potatoes
- mixing bowl
- big spoon (to mix with)
- big pan, with edges, for the oven
- knife
- cutting board
- potatoes, typically organic red
- preheat oven to 400 degrees
clean the potatoes, leave the skins on
cut potatoes into bite size pieces
for example, a medium sized one typically can make 8 pieces, half, half and half again
put those pieces into a bowl, large enough to mix
salt (about 2 or 3 good size pinches)
oil, enough to cover all the pieces
Herb De Provence
enough to make it look dirty, at first, like you put too much on the top of it
take a big spoon, mix until everything is coated evenly
pour potatoes on to the pan, put into the oven at 400 degrees for 30 min.
note: if you take the time to put the skins face down to the pan, it makes for a nice crispy edge
